I’ve started moving towards eating real food, and this week’s menu is complicated by husband dear’s decision to start the Atkins diet on Monday. I’d love to see other people’s Atkins menus – leave me a link!
Husband dear is working every day this week, and he’ll have meat and cheese rollups, hardboiled eggs, pickles, celery and radishes with dip, and salad with buttermilk dressing for lunches. I’m also going to make salmon rolls for extra fill ins and snacks.
I generally keep a bin of fruit in the fridge for snacks and to round out lunches. This week it holds apples, tangerines, kiwis, pears, and a couple of persimmons.
Sunday, Jan. 3
B: Egg sandwiches with cheese, eggnog (hey, why not?)
L: Leftover black-eyed peas and collards, grapes
D: Black bean soup w/ avocado, sour cream, tomatoes, and tostada shells
Monday, Jan. 4
B: bagels and cream cheese, pineapple
L: Macaroni and cheese
D: Hamburgers, sweet potato fries, creamed spinach (husband – no bun, side of scallop/bacon kabobs instead of fries.)
Tuesday, Jan. 5
B: Dutch baby, vanilla yogurt, blueberries
L: sausage and gravy over biscuits (sausage is conventional but MSG free)
D: Baked penne pasta, sauteed kale and onions; (husband, calf liver -he swears he likes it!), salad
Wednesday, Jan. 6
B: eggs, fried potatoes
L: pinto bean burritos with cheese, fruit
D: Top round roast with mushrooms, barley pilaf, green beans
Thursday, Jan. 7
B: pumpkin waffles with apple butter
L: peanut butter and jelly sandwiches, fruit
D: Spicy pineapple chipotle pork roast, rice pilaf, cauliflower/carrot/broccoli blend
Friday, Jan. 8
B: oatmeal with cream, sugar, walnuts, and raisins
L: Tomato soup, cheese toast, fruit
D: Chicken cordon bleu, buttered whole wheat egg noodles, brussels sprouts

I belong to great forum that can help with the transition to eating a real food type of diet. It is Cooking Traditional Foods. The people there are wonderful and have great ideas.

What the heck is Dutch Baby? I know your babies are German so Baby A is not the menu!
It’s like an egg pancake thing you make in the oven. It’s kind of sweet, so we don’t have it very often. My recipe is very scaled UP, though – I make it in my big roasting pan.
Put 6 T. butter in pan, stick in oven at 375 to melt.
9 eggs, 1 c. ww flour, 1 c. AP flour, pinch salt, 2/3 c. sugar, 2 cups milk. Mix together to form batter. Add vanilla extract or orange extract if you want.
Pour batter directly in hot pan, bake 30-35 minutes until pancake is puffed and golden. Cut into squares and serve. The cookbooks sprinkle powdered sugar on it, but it’s good with syrup or we had ours topped with vanilla yogurt.
I love to see the recipe for the spicy pineapple chipotle pork roast! We started eating real food last year. It can take a bit more thought, especially when making bread stuff, but it’s worth it! I even made my own sourkraut! So good for you and so easy! I have a couple of sites I visit for help, support and ideas! love it!
My recipe isn’t really a recipe. WalMart sells jars of Pineapple Chipotle salsa under their Sam’s brand. I just pour it over the meat and set the crockpot on low!
