Pumpkin Spice Latte. My favorite fall drink and every year I can’t wait until Starbucks rolls it out. That gets pricey, because I usually don’t buy enough drinks to qualify for a free Starbucks Drink with a Runner’s Reward!
I always had to wait for Starbucks because I could never make a great pumpkin spiced latte on my own at home. Oh, I tried. I googled, I scoured pins. I put pumpkin puree in the bottom of cups, in the coffee press, in the percolator (don’t do that, by the way.) I added cinnamon and nutmeg and microwaved sugar and milk. I tried making my own syrup with sugar and pumpkin. They were always just… meh. Mediocre. And I usually had pumpkin sludge at the bottom of my cup.
THIS year I was determined to hack a great, real food Pumpkin Spice Latte at home. I didn’t want to buy a bottle of artificially flavored syrup. I wasn’t content to just add spices and pretend like it tasted pumpkiny. I wanted the real deal.
I cracked the recipe and now I will share it with you!
The secret is to make your own pumpkin spice syrup which can be added to coffee or any drink. Using brown sugar for the syrup adds flavor and helps bring out the pumpkin, and you can use bottled pumpkin pie spice or your own custom blend of pumpkin pie spices. It’s super easy- 5 minutes or less and you will have a bottle of syrup that will make quite a few lattes!
If you like your pumpkin spiced lattes to be a little more subtle, scale back on the amount of pumpkin in the recipe. I add a full 3 tbsp because I love pumpkin and want the FULL pumpkin flavor!
Pumpkin Spice Syrup

Fill a large mug with 8 oz. strong, hot coffee. Add 2 Tbsp (or more, to taste) of Pumpkin Spice Syrup and stir. Warm 1/2 c. milk (I microwave it in a glass measuring cup). If you prefer “whip” the milk a bit with a small whisk or fork to create foam. Add to coffee, top with whipped cream and a sprinkle of pumpkin pie spice if you prefer.
