Food Stamp Challenge, week 36 and 37

I know I said the Food Stamp Challenge would be back, but with the holiday weekend, new baby, school starting, I had too many good excuses to waste actually doing what I should.

So, week 36 I restocked and spent $197 (on everything, not just food) and last week spent$31 (we had a stomach bug, so about all I did was run to the store for 7-UP, crackers, and milk.

Confused about the weeks?  Me too, I totally lost track in August.  So, because I’m the dictator of this blog, Week 38 shopping will be from Sunday, Sep. 13- Saturday, Sep. 19, and I’ll blog a menu for it on Monday.

Okay, so I won’t detail what we bought because I lost the receipts and also after a tight month we got an embarrassing amount of junk food.  But here’s what we’re eating this week!

Sunday, Sep. 13 – corn, cheeseburgers, leftover baked beans

Monday, Sep. 14- Waikiki chicken,  rice, broccoli (chicken cooked with peach preserves, almonds, and pineapple pieces) (Yeah, it’s a stupid name from a grocery store recipe card.)

Tuesday, Sep. 15 -lentil enchiladas, pintos, salad

Wednesday, Sep. 16 -Marlboro Man sandwiches, cole slaw

Thursday, Sep. 17 – red beans and rice, without okra, lest the children die.

Friday, Sep. 18 – Cuban black beans over rice, tostada shells

Saturday, Sep. 19 – crockpot London broil, mashed potatoes, peas

How do you cook london broil in the crockpot? I am very curious about this one.

The “london broil” cut is basically an untrimmed flank steak. I’ll probably do it with ginger and onions, because that’s a favorite around here and the only way my husband will eat ginger, which I like but he loathes! (Except on steak with caramelized onions!)

Randall’s had london broils on sale – 1.77 a pound which is a good price for boneless beef steaks in my neck of the woods. That’s why we’re having steak sandwiches and other red meat this week!

I bought 8 more bricks of cheese at Kroger’s $1 sale. They’re encased in plastic and expire in Feb. 2010, so I might not need to wax them unless I want to keep them as part of our hurricane stash (i.e., not refrigerated). Probably, I’ll procrastinate the waxing thing until they cheese is long since eaten, LOL!
