Food Stamp Challenge, week 29

Still no car, but I got a ride to WalMart from a friend.  I’m spending a lot less now that I can’t run to the store every time I run out of an item!

The downside is that WalMart has terrible meat, so we’re eating a lot of vegetarian meals this week.

We spent: $100.51

We got:

2# cherries, 5 lemons, 1 cantaloupe, 1 watermelon, 1 fresh pineapple, 3.7# onions, 1 head romaine, 3.6# bananas, 32 oz. minced garlic, 1 bunch celery, 6 cucumbers, 20 plums, 16 nectarines

5 loaves whole wheat bread, 90 corn tortillas, 2# animal crackers, 10# brown rice, 3 boxes whole wheat spaghetti, 5# dried beans, 2# brown sugar, 84 oz. oats

2 cans pineapple rings, 2 large cans peaches, 32 oz. chopped walnuts, 2 large jars applesauce, 1 can raisins, 6 oz. dried cranberries

56 oz. peanut butter, 4 large cans diced tomatoes, 2 large cans tomato puree, 3 small cans tomato paste, 1 gallon white vinegar

3 gallons milk (not organic, but at least rBGH free), 5# frozen broccoli.

We’re eating:

Sunday, July 19 – black bean soup with homemade tortilla chips

Monday, July 20 – chickpeas, cucumber raita, naan (if I can figure out how to make it!)

(Oh NOS!  My yogurt didn’t turn out last night.  Probably because I forgot it was cooling down to 110 degrees until after midnight, so I warmed it back up to what I hoped was 110 degrees, then added frozen starter, so it was too cold.  So we’re just having cucumber and onion salad with vinegar.)

Tuesday, July 21 – chicken alfredo florentine, salad

Wednesday, July 22 – Scrambled eggs, pancakes, fruit salad

Thursday, July 23 – Brisket roast, broccoli, potatoes

Friday, July 24 -Enchilada casserole

Saturday, July 25 – hamburger helper (with lentils and rice), froz. veggies

I’ve been without a car now for a day and a half and it is driving me bonkers. In our case it is either the starter or the battery is bad, however, the battery is not that old. I really have a stocked pantry so could make do with what I have but I miss the freedom just to run to the store- You are right it does force you to save money lol. Actually i could walk to our grocery store- It is 1.2 miles away and I can walk neighborhood roads to get there – no crossing any major roads or anything. However this is South Fl in July and it is hot and I’m a lazy wimp. I am working on that though.

I’m so sorry that you are still without a car. We’ve certainly been there ourselves and I will keep praying for you. It sounds like you are still planning some great menus on the cheap, though!

Although you may love your yogurt recipe, I thought I’d share mine with you.

Homemade Crockpot Yogurt
1/4 cup bought, full-fat plain yogurt
8 cups whole milk (pasteurized and homogenized is ok. DO NOT use ultra-pasteurized).

Pour milk into crock pot. Cover. Let cook on low for 2 1/2 hours.
Turn crock pot off. Let milk sit for 3 hours.
Take a cup or two of warm milk from the crock pot and put it in a small mixing bowl. Mix in 1/4 cup of store-bought yogurt or 1/2 cup of homemade yogurt as a starter. Stir together.
Mix the starter into milk that is already in the crock pot.
Put the lid on the crock pot, then fold and put a heavy bath towel over the crock pot to insulate left over heat.
Leave the crock pot off.
Go to bed!
In the morning the yogurt will be ready! (It will be thinner than store bought)
Pour yogurt into container(s), cover it, and put it into the refrigerator to fully cool.

I hope you can get a car soon. We have been in the same situation multiple times. I love reading about your growing family.

I’ve seen crockpot recipes, but not one that had the crockpot OFF. Interesting! I make mine in a thermos. Heat milk to 180, cool to 110, add some starter, and seal it up. It works if you can NOT mess up the milk heating (like I did!) LOL
