Food Stamp Challenge, Week 25

Well, my sister is gone and I’ll be back in the kitchen a bit more this week.  I did the grocery shopping, and it was harder than usual because I had no idea what we had in the fridge at home!  We also had a poker night on her last evening and bought even more junk food to eat.

We spent: $155.44

We got: (sorry, no pics)

2# cream cheese, 4# shredded cheese, 4 gallons milk, 3 doz. eggs, 1# sour cream, 1 qt. buttermilk, 1 qt. orange juice, 14# ice

12 ears corn, 2 heads lettuce, 5# tomatoes, 15 limes, .5# jalapenos, 1 bunch cilantro, 7# bananas, 3 large navel oranges, 24 nectarines, 16 red plums, 6# apples, 1 pineapple, 5# carrots, 10# yellow onions, 1# red onion, 6 cucumbers, 2 1/4# cherries,  16# frozen veggies

4 pkg. hamburger buns, 18 oz. generic Cheerios, 100 corn tortillas, 4 bottles Hunts ketchup, 2 cans hominy, 4 large can peaches, 8 cans Ranch beans

2# turkey lunchmeat, 10# 93% ground beef

1 bag Chips Ahoy!, 1 almond poppyseed bundt cake, 1 box Rice Krispies, 2 bags mini marshmallows, (guess what we’re making!), 2 bags chocolate chips, 2 bags Chex mix, 12 pk Pepsi cans, 2 liter Dr. Pepper, 4 bags tortilla chips

We’re eating:

Sunday, June 21 – Father’s Day – ordering Chinese

Monday, June 22 – Pork loin roast, potatoes and onions, froz. veggies

Tuesday, June 23- Crockpot lentil enchiladas (never made them in the crock before, but if I can make crockpot lasagna, how hard can enchiladas be?), pico de gallo, summer salad (cucumber, tomato, red onion, and vinegar)

Wednesday, June 24 – Pork fried rice w/veggie stir fry

Thursday, June 25 -  Garlic lime chicken, brown rice, frozen veggies

Friday, June 26 – Chicken, white bean, olive, and chard pasta salad, carrot salad.

Saturday, June 27 – homemade Mexican hamburger helper (gd. beef, corn, black beans, picante w/ pasta)

It’s already too hot to turn on the oven, so everthing will be either crockpotted or made on the stove.  Do you have any tried and true recipes to beat the heat?

Good job! I don’t think I do that well on my first week back in charge after having a baby… How DO you do it?

I need to try more crockpot stuff. These hot summer months kill me in the kitchen.
