Menu Plan Monday

Oh dear. I am behind in my 31 Days of Pumpkins.  It’s the 15th and I think I’ve only managed 10 Days of Pumpkins so far.  To be fair I did go out of town for 4 days.

Well, a lot of that is because I had a lot of recipes planned but I’m going dairy and gluten free and taking one of my daughters dairy and gluten free. So I’m just not feeling it in the kitchen at all.  I’m kicking around the idea of going Whole30 but frankly, I’m scared to try it.  Gluten free will be hard enough, especially breakfast. I don’t really like eggs and I don’t really like fruit.

Discombobulated. It’s not just my tagline, it’s my life.

Anyway, here’s our menu plan for the week:

Monday: Maple Dijon pork roast with fingerling potatoes (crock post), sweet and sour cabbage

Tuesday: Sweet potato chili with ground beef and black beans

Wednesday: Three Sisters Soup (a creamy bean based corn chowder with pumpkin.)

Thursday: Autumn ropa vieja (with the leftover pork and sweet potato chili, served up in tortillas)

Friday: Spaghetti (with spaghetti squash for me, hubs, and Miss A.)

Saturday: Garlic chicken with pumpkin polenta

    I went from eating whatever I wanted (mostly crap) to a diet to treat candida, which had caused rashes, brain fog, weight retention, inflammation, and a host of other icky things. This meant pretty much meat, eggs, veggies and veggies. :) Very little fruit, no dried fruit, no vinegars, no mushrooms or potential mold-harbingers, no cheese, definitely no wheat or sugar. After nearly a year, I felt like a new person. My family did not do, so it was extra-challenging as chief cook and bottle-washer. I still avoid the wheat and sugar, but have some cheeses, fruits and mushrooms. Good luck!

    Oh yummm… we’re not big on chowder but I’d love to try that ropa vieja recipe!

    I went 99% gluten free last year, and have backed off from it some but still focus on lower-gluten foods. It would be really hard without dairy.
    My favorite gf breakfasts are almond meal pancakes with cardamom and cinnamon, or for a quickie, an apple with peanut butter. Oatmeal is good too, if you are not celiac or can find certified gf oats to avoid cross-contamination – I think Bob’s Red Mill makes some. Grits with eggs or bacon -always a winner.
