Menu Plan {Labor Day, Sept 3-9}

Well.  Summer’s over and I took a look at our spending and HOLY COW.  We were, uh, relaxed with the funds at the grocery store.

Time to get back on track.  Our budget right now is $900 a month (I upped it from last year’s $200/week because of inflation).  This feeds 11 people- a husband with a physically demanding job, two teenaged boys, two tweens, four elementary aged children, and two toddlers.  Plus me.  I gotta eat, too!  (Note: $900/month is the total for all household goods- food, treats, paper goods, cleaning supplies, etc., and I’m going to figure $225/week breakdown.)

I’ll be blogging our food expense this month, because it helps keep me accountable.  But not yet, because I haven’t gone to the store in September!

Here’s our menu plan for the week:

Sunday: this ‘n’ that (haven’t gone to the store, so throw together meal with leftovers)

Monday: Stir fry- going to my sister’s house, but she doesn’t have a grill.  So we’re going to make a big ol’ stir fry with our 24″ cast iron wok and our turkey fryer.  Hey, propane is propane!  Yes. We cook in our drive way.  Just our way of classing up the neighborhood.

Tuesday: Chopped Salad – fall version with pears, dried cranberries, feta, grilled chicken… yum!  It’s still hot enough for a salad main dish but I am so ready for fall flavors.  I love cranberry and pumpkin.

Wednesday: Greek Chicken in a crockpot.  Yep. Buying a new crockpot because we’re starting school this week, my home business is going crazy, and it’s just easier.

Thursday: Chicken tacos with refried beans.  Kids have been begging for this.  I found a recipe for refried beans in a crockpot, so I’m going to try that too!

Friday: Paninis.  Last week I wrote about making a panini on the stove top without press and can’t get it out of my mind. Those were some SERIOUSLY good sandwiches.  Probably make provolone, spinach, tomato, and pepperoncinis.  Don’t leave those little peppers out, they take the sandwich to a whole new level.

Saturday: Brisket.  Hubs wanted to cook out Labor Day, but we made plans with my sister so I’ll buy it on sale this week for him to cook up on the weekend.  He has it down to a science, and it’s one of those whole day meals.  I’ll probably make some German Potato salad and grilled summer veggies on the side, plus corn.  Corn’s still on sale down here, and it’s still definitely summer weather in Houston (92 degrees today!).

    I’m looking forward to you blogging your expenses this month. I feed our family of 10 and I’ve been feeling the numbers creep up. We’re in rural Indiana with no Costco and less shopping options in general. Due to the drought, my garden bit the dust. So there’s not really any relief in sight at the register. I’ve noticed prices climbing again. All in all, I could sure use the encouragement/camaraderie / commiseration /humor/ eye roll – whatever ya got. Thanks!

    I wish my family would eat salads. It is really warm here, has been for several weeks, and I try to do the least amount of heat in the kitchen of an evening. I too am looking forward to seeing how your budget works out. I am trying to save by cooking more from scratch. Prices are just getting ridiculous around here. It is taking the same amount to feed my family of three as it did when I had six of us. I have no room for a garden, not even any room for a container style garden.

    I made it a point to coupon more so we’d have more space in our budget for tasty treats. With a husband on a low carb diet, a pescatarian daughter, and a dye free, preservative free preschooler, plus the teenage boy and me, our budget quickly gets out of control if I don’t put a handle on it.
