The Everything Beans Book Giveaway!

Kitchen Stewardship has a new ebook out, the Everything Beans Book.

When she says “everything”, she means it!  This book tells you everything you need to know about beans.

One of my most popular posts is how to prepare dried beans.  This book covers those basics, plus how to store them, use a pressure cooker, sprouting, and a special section for lentils.

Then come the recipes, which are marked so you can easily see which ones are kid friendly, how much the recipe will cost, and how long it will take.  Following each and every recipe are ideas for making it faster, cheaper, or variations on the recipe.  She even makes beans into pasta sauce and dessert.

We eat a lot of beans, but there were several new-to-me recipes.  My husband raved about the DIY Rice-a-Roni, which came together easily and then simmered while I nursed the baby.  Getting in and out of the kitchen quickly is a priority right now!

I tripled the recipe, so the pictures show a lot more food than you would make for 4 people.

Ingredients:

1/2 c. chopped onion, 2 celery stalks, 1 can (2 c.) beans, 1 c. brown rice.

Also, chicken stock.  I freeze ours made from leftover chicken bones.  I use silicon muffin tins (1/2 c. portions) and a silicone mini-loaf pan (1 c. portions).  Yes my chicken stock is very ugly but it makes the rice taste oh-so-good!

Chop the onions and celery and then soften in a little olive oil.  Toss in some chopped garlic.

Katie offers the option of browing the rice in a separate pan to get the full texture and flavor of the boxed mix, but since I’m a lazy cook I just threw the rice in after cooking the veggies for a bit.

Let the rice get toasty but not burned.  Add the chicken stock and beans, cover and simmer 40 minutes.

Easy peasy!  Even your kids could make this.  It’d be great with chopped green peppers and red beans.

Sorry, no pics of the completed meal. Everyone ate it before I could grab a shot.  Husband loved it so much he posted about it on Facebook!

If I had the book the first recipe I would try is the homemade limey refried beans as I love refried beans. It looks like a really good bean book.

I live the monday missions site – never “bean” (sorry) there before there are lots of good ideas to pick from – my favourite is No Nukes for Cruciferous Vegetables. I bought a cheap steamer about 4 years ago and it was my best $20 investment. I love it for everything that can be steamed.

Ok I would love to try the lentil stew…love lentils! btw I make pinto beans and then use the juice I cooked the beans in to make bread. I am a scrimper and limit waste to maximize $$.

Most of them seem so yummy to me but I would like to try the following:
White Chicken Chili with Lime ( sounds and looks new to me and I’m always open to try new things) and definitely the lentils stew- the only thing I know about lentils is that you can cook them with carrots and thyme, I never tried other recipes involving lentils

Meal planning interests me the most. I spend a lot of time meal planning. I have a growing cookbook collection and I search for recipes on the internet. I’m always looking for healthy and delicious recipes to make. I usually meal plan for 3-4 days ahead. It saves a lot of money. I post on my FB page what I cook for dinner.
