Y’all know how I always tell you to cook at home? And how much I love easy recipes?
Well. Now it’s even more important to fire up the stove because school’s starting up and so are the sports and extracurriculars, and tummies have to be filled on a schedule now. I don’t do schedules well. Which means planning- and having super fast dinner back up recipes for when I fail to plan.
I fail to plan a lot.
HEB knows it’s a tough time for moms so they issued me and nine other bloggers a challenge: make some tasty, easy, fast meals. And blog them. Naturally I was all over that like white on rice.
Because I love to eat, but I don’t like to slave away in a kitchen with 400 obscure ingredients.
Now, you know I’m a real food realist. I think that even baby steps towards eating ‘real food’ are wonderful and let’s face it, I’m not in the kitchen grinding my own grain and krauting my own cabbage. So look for recipes using convenience and prepared foods, but with a healthy twist.
And because simple and easy are my favorite kind of recipes, these meals will have seven ingredients or fewer and cook up in under 30 minutes flat. Yes, seriously. Half an hour to a happy dinner.
Healthier than a drive thru, guaranteed.
