Eats This Week Sept 24 {Menu Plan}

Fall is my favorite time of year.  Autumn in Houston is a little disappointing- no piles of leaves, no crispness in the air – but I can still break out the pumpkin recipes without people looking at me strangely!  And I love me some pumpkin.  (You may have noticed pumpkin is in a lot of my recipes- pumpkin chickpea burgers, Three Sisters Soup- a pumpkin corn chowder made healthier with white beans in place of some of the cream, {almost} Fat Free Pumpkin Muffins…yum!

Unfortunately, it’s still high 80s and even 90s here so my “First Week of Fall” menu plan is really more “Still Feels Like Summer” menu plan.  Oh well.

1.  Chickens, rice, veggies.  Yes, chickenS.  I am feeding almost a dozen people including two teenage boys.

2. Pot roast, mashed potatoes, broccoli with cheese sauce.  Planned leftovers of the pot roast to make pizza toppings.

3. Pizza- yep, still have some Trader Joe’s crust in the fridge. Seriously, their pizza crust is the best kept TJ’s secret.

4. Chicken pasta salad with kale and lemon butter sauce.  ”Lemon Butter” sauce makes even the cheapest recipe sound gourmet.

5. Shredded pork tacos

6. Black beans and rice with leftover shredded pork and veggies (ropa vieja)

7. Fish sticks, zucchini fries

I seriously can’t wait to start making things with apples and maple syrup and pumpkins. I love fall!  What’s your fave season?

    I love breaking out the autumn decorations and my crockpot for some stews and soups.
    I’m always interested in some new recipes to add to my Recipe File Box. That’s why I love MPM!
    Looks like there’s going to be lots of yummy meals eaten this week.

    Trader Joe’s has a wonderful supply of gluten-free foods, too. Some of my favorites are the chocolate chip cookies (taste homemade); the gluten-free flour tortillas to make burritos or cheese crisps; the Udi bread (raisin bread is delicious); black licorice Scottie dogs (I’d thought I had to give up licorice forever); chocolat macaron cookies. Indeed all of their chocolate goodies are wonderful, from the big chocolate bars to the chocolate covered caramels to chocolate covered toffee or the chocolate truffles. A chocoholic’s paradise! Other gluten free items that are good are their cereals and trail mix.
