Dog Days of Summer Menu Plan

Well, I must say I learned my lesson last week when I turned on the oven and roasted some chickens.  It took hours to cool the house down.  The dog days of summer end this week, and not a moment too soon!  Around here it’s either blistering heat or flooding.  Mostly heat.

So, stovetop cooking it is!

Sunday: Rotisserie Chickens from Costco, froz. veggies.

Monday: Taco salad – meat, beans, cheese, and a variety of veggies.

Tuesday: Lentil sloppy joes.  Well, half and half meat/lentil.  Meat is getting so expensive, this is a good way to make it stretch.  I bought whole wheat bolillo rolls, they are cheaper (and bigger!) than whole wheat hamburger buns.

Wednesday: Peanut chicken with crunchy veggies over soba.  OK, not real soba, but whole wheat spaghetti for an easy to find, inexpensive subsitute.

Thursday: Hearty grain salad – quinoa, brown rice, vinaigrette, various veggies.  May or may not add chicken.

Friday:  Fish tacos, cole slaw, coconut rice

Saturday:  Spinach-pumpkin seed pesto pasta with grilled chicken.  I really don’t like basil, but I think spinach and parmesan makes a nice pesto-type sauce.  And I read a recipe for pesto using pumpkin seeds that sounded intriguing.  If it turns out, I’ll post the recipe.

Do get ever get inspired and combine recipes?  Do they turn out?
