Well, really only Xavier is back to school this week. The St. Joseph Academy for Wayward Children, our homeschool, starts the day after labor day. So, what are we having?
Well, in a word, more chicken. I really want to make some pork with green chile since Hatch chiles are in season, but pork has been crazy expensive lately. I’m hoping a loin will go on sale soon, so I can stock back up.
Still too hot to turn the oven on, but we might catch the side of Hurricane Isaac. I have my hurricane boxes finished, with emergency food and meal plan in place, just in case.
Monday: Goulash, because I still have some sloppy joe filling hanging out in my fridge that MUST be eaten.
Tuesday: Garlic chicken farfalle, broccoli with cheese sauce. Mmmm cheese sauce, always a crowd pleaser.
Wednesday: Taco salad. Yes, we have this a lot especially in the summer. But we like it.
Thursday: Asian Beef lettuce wraps with Coconut Rice- The kids aren’t into lettuce wraps so much, so we serve it over rice for them. Would also make an amazing egg roll or won ton filling. Let me know if you want the recipe and I’ll blog it.
Friday: Garbanzo bean salad- chickpeas, snap beans, red onion with a sweet and tangy vinaigrette. Maybe over lettuce. Probably throw some quinoa or brown rice in there too, so it will be light yet filling.
Saturday: Probably pizza out, because we’ve planned this day for major cleaning overhaul and pizza always motivates.
Sunday: Cookout! My husband makes an amazing brisket, and we’ll roast some corn to toast the end of summer, plus have our favorite grilled summer veggies.
I know I didn’t link to a lot of recipes. I usually look at recipes in magazines and online, and use them as “inspiration” for what I’m making, so a lot of my cooking is off the top of my head.
