Hi Eve,
My husband has been pink slipped and replaced by workers from Mexico who barely speak English and worked under fake names (I don't KNOW that they were illegal, but I know the other things for a fact.) He's in construction. One of his friends was named Miguel - Miguel got called into the office, because Miguel's SS# was flagged for wage garnishment for child support. The next Monday, Miguel was working in a different department under the name of Jesus.

Anyway. Most of the recipes I use I kind of make up. We don't eat meat every night. The library had some good vegetarian cookbooks, and I also really like Cheap Healthy Good. Hillbilly Housewife also has menus for tight budgets, including a $45 a week budget.

If you haven't already, check out my articles, How to Prepare Dried Beans, Dried Beans are Convenient, and How to Save on Produce.

I'm happy to share any recipes I have or answer any questions - just let me know if there's something you want to know about my menus!

Where do I find the recipes you are using? We just went on food stamps and are getting $205 for the month. It is not going to be easy. I am on SS and that just pays our bills. Thank God for that though. DH is trying to find work but being in construction and at his age, it is not easy to find.
I hate to say it, but most of his work is being done by those who are willing to undercut all the workers around here and work for next to nothing. They can do it because they live ten to a room but the locals cannot feed a family on that so they job goes to the illegals. We are not bitter about it, they have to live too but it does seem unfair.
