Food Stamp Challenge week 30

Well. Our van ran on Saturday and Sunday, and wouldn’t go into gear on Monday. So I’m without a car again. Side note – when we brought our car INTO the transmission place, it had 183,000 miles on it. When I drove it on Friday, it had 116,000 miles on it. What are they DOING over there?
We’ve still got a pretty good stock of dry goods in the pantry – at least 20 pounds each of brown rice and various beans, canned tomatoes, potatoes, and pasta. I made it to the 99 cent store to pick up some fruit and we’ll just eat what we have here for now.
A rant on the HEB! They advertised eggs for $1/ 18 pack. They were out. Usually they’ll substitute – 3 doz. eggs, instead of two 18 packs, for example. Not only did HEB refuse to substitute, they refused to write me a raincheck! They said that there’s an egg shortage because of the heat wave. Well, the heat’s been going on for at least 6 weeks, long before the sale came out. They’ve never refused to write a raincheck before. The store manager told me I would just have to come back before Tuesday to get my eggs. I wonder if this is isolated, or part of a trend I noticed about sales and coupons in general? Anyone else noticing stores tightening up their sale or coupon policies?
We spent: $42.22

We got:
2 doz. eggs, 3 gallons milk, 1 pt. heavy whipping cream, 2# shredded cheese
3 cans corn, 1 can bamboo shoots, 1 can baby corn, 2# popcorn kernels, 12 pack bottled water (free!), 20 strawberry tea bags, 8 pk. cookie treats, 2 Reese’s peanut butter cups (don’t shop when you’re hungry!)
6 tomatoes, 6 cucumbers, 12 pears, 4# nectarines, 4# plums, 6 small red onions, 12# frozen veggies
We’re eating:
Sunday, July 26 – black bean and chicken tostadas, fresh pineapple
Monday, July 27 – polenta and chard w. white beans, watermelon
Tuesday, Julyl 28 – Crockpot falafels, casserole style because I’m lazy, flatbread, summer salad
Wednesday, July 29 – brisket, potatoes, brussels sprouts
Thursday, July 30 -lentil enchiladas, veggies
Friday, July 31 – pasta salad – rotini, broccoli, red beans, vinaigrette, onions, garlic
Saturday, Aug. 1 – chicken stir fry, rice

From one mom to another- Do you really get your kids to eat brussels sprouts?
In my family I would be the only one eating them.-
But then I have a hard time getting them to eat peas , carrots, or corn. My older ones are getting better but my 13 year old drives me in sane with his pickiness.

Brussels sprouts are my husbands fave veggie, so that helps. Only one of the kids doesn’t like them. I cook some chopped bacon, add some onions (and garlic, we put garlic in everything), and when the bacon is cooked add the brussels sprouts. Don’t cook over too high a heat, it makes them bitter.
Bacon makes everything better!

I haven’t found any recipe in the world that will convince them (or me) to eat lima beans, though.

I’m laughing about the bacon here. When I was first married (like 20 yrs ago) once I put bacon with the green beans for some special occasion. Well 20 yrs later the only way my family will eat green beans is with bacon except the 2 yr old who usually picks it out.
We don’t eat brussel sprouts here though. Lima beans are loved though even just with butter. I do have a baked bean recipe with lima beans that uses bacon.
I know Meijer here in the midwest seems to be doing more restrictions on sales/coupons lately. I think the max amount of coupons is 4 of the same coupon. They also had no rainchecks for their strawberry sales recently. Last week Kroger limited their milk sale to 8- 1/2 gallons. Even my small family uses that much each week. Another store in town that has bananas on sale on Thursday limits it to 5lbs per family.

I’m in the Midwest also – last week the closest grocery store flyer arrived Wed. noon – I went to the store after dinner and they were OUT of both meat specials and the cheese that was on sale – no rainchecks. And the fruit that was on special had almost none left, just the bruised/split or wilted bottom of the barrel stuff. Also noticing more empty spots on shelves and shelves where the product is only one or two deep. Hmmm…what gives here?

I’ve never tried to get a raincheck at HEB, but they’ve told me they wouldn’t take coupons printed from the internet. Of course, that was a year or so ago, so their policy must have changed, considering their own website hosts coupons!

My HEB had a ton of eggs on Sat. They also had the note about the heat wave, which confused me b/c they were flush with eggs. They were out of the pinto beans:( I got the tomato sauce and green beans.
