Food Stamp Challenge, week 20

Feeding my family of 10 on $2 per person, per day!

HEB is having a great sale on meat, so I tried to stock up.  We usually eat meat 4-5 nights a week (and rarely for other meals, unless we’re eating leftovers.)  I linked to some meatless meals we like on the sidebar.

When we do eat meat, we often try to stretch it, using the meat as a condiment and for flavor.  Stir fries and Mexican food are naturals for this.  Try making a stir fry using 2-3 oz. of meat per person, and adding a ton of veggies.  Stretch taco meat with pinto beans and potatoes (potato tacos are so good!).  Instead of ham steaks for breakfast, make a hash with chopped ham, potatoes, and onions.  Your budget will thank you!  (I say “we” because husband dear is a great cook, and he’s been making dinner for the last couple of weeks while I lay around and incubate.)

I also got another great deal at the 99 cent store.  I got a 5 pack of cucumbers, red bell peppers at 3/$1, and 24 oz. loaves of Sara Lee whole wheat bread all for 99 cents each!  Don’t forget to check out the dollar store for healthful food on a budget.

6# organic red apples, 6# regular apples, 4.5# tomatoes, 1# fresh snow peas, 3.5# yellow onions, 3 pears, .4# poblano peppers, 8 ears of corn, some key limes, a pineapple, 2 watermelons, 4# bananas, 5 cucumbers, 6 red bell peppers, 2# red onions, 2.5# baby bok choy, 2 small artichokes, 4.5# zucchini, 2 large bunches radishes, 1 head red leaf lettuce

20# sugar, 1 box multigrain cereal, 12 small pitas, 1 pkg. whole grain tortillas (the Mexican market has little old ladies making them fresh on site.  They were still warm… I had to break into the bag and ate one in the car on the way home!), 1/4# granola, 4 loaves whole wheat bread.

1 can pineapple chunks, 1 box Earl Grey tea, 1# dried navy beans, 2# dried black beans, 1 bunch Tootsie pops, 20 oz. Dasani, 20 oz. Pepsi. (Yeah, the more pregnant I get the more junk food I let slip!)

2.5# shredded cheese, 9 doz. eggs, 1# cream cheese, 16 oz. sour cream, 1 qt. buttermilk, 10# frozen tator tots, 7# reddy ice

6# boneless beef roast, 4# boneless pork chops, 18.4# boneless pork roast

We’re eating:

Sunday, May 17 – Husband dear took us out to eat with his eBay money!

Monday, May 18 – Orange glazed pork roast, carrots, potatoes, sauteed zucchini, corn on the cob (Oops!  Forgot I had these in the fridge!)

Tuesday, May 19 – Salad bar night w/ hard boiled eggs and chickpeas, (trying my hand at homemade dressing)

Wednesday, May 20- Pork fried rice,<s> stir fried snow peas and bok choy</s> (using leftover pork and frozen veggies*)

Thursday, May 21 -crockpot falafels, cucumbers w/ yogurt sauce, bulghur w/fresh tomato

Friday, May 22 – Charro beans over rice, some kind of veggie salad/pico with whatever produce we need to use up

Saturday, May 23 – Cookout!  Beef brisket, hot dogs, potato salad, etc.  (***Updated*** cookout cancelled, ate spaghetti and frozen veggies instead)

Snacks this week: Apples, watermelon, pineapple, kiwis, carrot sticks, pepper sticks.  And probably some hardboiled eggs.

    Looks like you’re making progress in keeping both your family’s wallet and tummies happy! I especially loved the meatless recipes you provided on the sidebar. I’ve found that cutting meat from my diet really helped to lower my grocery costs.
    It’s great that you added more protein to the Indonesian Curried Bean Stew and if your family enjoyed the chickpeas, you should check out this delicious recipe for Indian- Style Chickpeas: http://www.meatlessmonday.com/recipe_dinner_070416. As an intern with Meatless Monday, as well as a vegetarian in my everyday life, I can tell you I appreciate a good veggie recipe with lots of protein. Meatless Monday is a nonprofit public health initiative with Johns Hopkins Bloomberg School of Public Health that encourages cutting back meat consumption one day a week, reducing saturated fat intake to reduce risk of heart disease, stroke, diabetes, and cancer (as well as decreasing our carbon footprint.) The Meatless Monday recipe archive (http://www.meatlessmonday.com/mealplanning) offers meatless recipes that are tasty, healthy, and the ingredients won’t break the bank.
